Traditional recipes often finish the sweet with a whisper of saffron and a garnish of dried rose petals or pistachio.
Born in the halwai bazaars of Gangapur City
Kheer Mohan is believed to have originated in Gangapur City's halwai bazaars over 100 years ago. Local families passed the recipe down from father to son, quietly perfecting the balance of chhena and khoya, the temperature of the kadai, and the density of the syrup. For generations, travellers changing trains at Gangapur Junction would step out just long enough to pack a box home. Today, that same town — and this same sweet — remains a source of civic pride.

The traditional halwai process
Making Kheer Mohan is unhurried work. It begins before dawn: milk from local dairies is boiled and split to produce fresh chhena, while another batch is reduced patiently in a heavy iron kadai to make silky khoya. The two are kneaded together by hand, shaped into small rounds and lowered into a simmering syrup where they drink up sweetness for hours. The result is a sweet with the softness of chhena and the depth of khoya — the balance that gives Kheer Mohan its identity.
